Cranberry Brussel Sprouts Recipe

Feeling creative and have some leftover Cranberry Preserve in your fridge? Here's one of our favorite quick recipes for Sweet and Savory Brussel Sprouts. Don't have any brussel sprouts around? Try it on another veggie and let us know in the comments how it turns out!



Ingredients:

Brussel Sprouts
Ella and Ivy Epicurean Cranberry Preserve
Manchego Cheese (or your favorite cheese)
Olive or Avocado Oil
Apples (optional)
Pears (optional)
Peppers, jalapeno or serrano are my first choice but use whatever you love (optional)
Salt
Pepper
Spices

Measurements:
All to taste!

Directions:
Cut the brussel sprouts in half. Lightly coat bottom of pan with oil. Toss brussel sprouts in cranberry preserve (start with a couple generous tablespoons, and then add more depending on how lightly or heavily coated you would like them). If you have an apple and/or a pear around chop them into chunks and toss in with the brussel sprouts. For those of you that like spicy food if you add a finely chopped pepper or two it makes a great addition. Add any spices that you like to the mix, I really like to throw in some Italian herbs but you can go a lot of directions here (fresh herbs also work great). Pick your favorites and run with it, it's all about experimenting. Bake for 20-25 minutes at 350. Shred a little manchego over the top and pop it back in the oven for a couple more minutes to melt. Then serve and enjoy.
